A week with sommelier Davide Piumatti

From June 18 to 25, 2026, the Royal Horizon Beijo Mansão Ponta Sino welcomed Italian sommelier Davide Piumatti for a sommelier training program dedicated to our bar, restaurant, and food & beverage supervisors. The goal of this week of exchange in Santa Maria, on the island of Sal: to deepen wine knowledge, refine food and wine pairings, and further raise the level of service offered to our guests. Davide Piumatti, a passionate sommelier from the Aosta Valley

Born in Aosta in 1986, Davide Piumatti has nurtured a passion for wine since childhood, in the vineyards alongside his grandfather. For the past four years, he has been Hospitality Manager and sommelier of the Cave des Onze Communes, the largest winery in the Aosta Valley. Since January 2025, he has also been an official sommelier of the Italian Sommelier Association (AIS), with which he collaborates on wine service, tastings, competitions, and training.

“It is with great pleasure and honor that I come to Cape Verde to share my passion and expertise with our colleagues,” he said before arriving on the island.

A sommelier training program built around four pillars

For a week, our bar, restaurant, and F&B supervisors worked with Davide Piumatti around four areas: wine knowledge, service excellence, food and wine pairings, and the guest experience. The program combined theory and practice, designed as a moment of sharing and collective growth — “a week dedicated to knowledge, sharing, and progressing together,” in the sommelier’s words.

This approach reflects a simple conviction: in a 5-star resort, the quality of the experience depends as much on the glass and the plate as on the skill and guidance of those who serve.

What our guests will gain

The benefits of this week will be felt very concretely at the table. In our three à la carte restaurants — the French bistro O Vinho, the Asian restaurant Zayko, and the Italian Royal Beach Club — our teams will know how to guide each guest toward the right pairing of dishes and wines. And to extend the evening, La Cave, our dedicated bar open from 7 p.m. to midnight, offers a natural setting for this wine culture now shared by the entire team.
